These ground cherry scones are a modified version of my favorite currant scones. You can dry the ground cherries yourself or substitute dried golden berries which can be bought at nuts.com or a variety of other sellers online.

Ingredients
2 cups ground cherries
2 Cups flour
2 Tablespoons Sugar
1 Tablespoon Baking Powder
1/2 teaspoon salt
6 Tablespoons Butter
3/4 Cup Milk or Cream
Directions
- Place the ground cherries on parchment paper on a baking sheet and bake for ~6 hours at 170 degrees. For drier fruit, bake longer. For jucier ground cherries, bake shorter.
- In a food processor blend flour, sugar, baking powder and salt with butter until butter is in pea sized lumps
- Pour into a large bowl and mix in the milk until combined.
- Remove dough to a floured surface and roll out to 1 inch. Sprinkle as many dried ground cherries as you like onto the dough and then fold over. Fold again and roll out dough. Then fold again and roll out to 1/2 inch thickness. Cut into small circles or wedges. Place on a baking tray lined with parchment. You can either freeze these for later (up to two months) or bake them immediately.
- Bake at 425 for 15 minutes until scone is a light golden brown.
