Ground Cherry Curd

Ingredients

  • 2 Cups ground cherries (husked)

  • 8 egg yolks

  • 3 eggs

  • 150g Sugar

  • 1/3 Cup lemon Juice

Directions

  • Cook the ground cherries in a sauce pan with 1/3 cup water until them begin to soften. Blend the cooked ground cherries with the liquid in a food processor or blender
  • Using a fine sieve, strain out seeds and pulp from juice
  • In a small pan, mix yolks, eggs, and sugar. Then add lemon juice and 1 cup ground cherry juice.
  • Heat over stove on medium, stirring constantly, until the curd thickens at 170 degrees. Pour through a sieve to strain out any lumps.
